To sear it. Very hot grill or pan and sear it to hold the juices in them you can cook it a bit more in the oven if you like it well done. All the juices are still in it. Also marinating it before with some vegetable oil and a touch of olive oil, even a bit of butter. If you only use olive oil it will burn under high heat. You can use any marinate you want to, herb, garlic so many things. Also a slight bit of salt and pepper. Also different cuts all have there different little nuances.

An initial sear over high heat if possible, not overcooking (well done steaks are an abomination), and letting the steak rest for a couple of minutes after coming off the heat. This is so that the juices redistribute throught the meat and don't all come spilling out at the first cut.

In this carnivores opinion, good steaks are first bought. I like a ribeye, at least choice grade, with plenty of marbling. Then get your grill or grill pan really hot. Sprinkle both sides of your steak with cracked pepper and kosher salt. Put steak on. Love the sizzle! 8 minutes later flip. Continue to love sizzle.5 minutes later remove to plate. Slice and butter baked potato. Gather asparagus. Place small wedge of gorgonzola on plate. Allow angels to desend from heaven and weep!

marinate overnight or at least 4 hours -- never poke it to see if done juices escape. sear the outside to hold in those juices and don't over cook and always get cab never select.

i rub it in olive oil, sprinkle it with salt and pepper. put on very hot grill, two min rotate 90 degrees for cross hatching and two more min, flip and repeat. A very hot grill. If you have filet mignon you want it to be medium rare inside. It doesn't take long and is delicious. Just make sure that when the steak goes on the grill, the grill is already very hot. I also added a steak rub right before grilling on both sides. Delicious.
