There should be no reason why they can not cash a money order immediately.
Unlike a check, which is essentially a promise to pay - a money order is actually cash money.
You've already paid for the money order when you bought it. A check must be cleared all the way to your bank account to make sure you have the money that the check represents.
In short:
A check is a promise to pay
A money order is the same as cash because you already paid
