If you make it with free flowing brown sugar no one will notice. If you make it with packed brown sugar, there is more moisture in the sugar and it will affect the cookie's texture and flavor. Check with a good cookbook for the exact amounts for substitution. Not always going to work.

Yes it would, white sugar is much more fine then brown. Also brown sugar had a different texture and taste, but try it, i may be better. GOod luck

well if ur making Chocholate chips u need brown sugar, but it may be sweeter tahn white because of the molasase

Yes, it will make a difference. The type of sugar you use will affect the browning and the crispness of your cookie, maybe drastically. Brown sugar contains molasses and if you use just brown sugar, the cookies will absorb a lot of moisture from the air, especially after baking and cooling.
