  • I don't know what pouches you use. I just make homemade cornbread. Sometimes I do it all cornmeal, sometime ! add some wheat flour to it. But it always comes out lovely, and light, moist. Just about all the boxed cornbread mixes end up dry. One hint to keep it from getting tough, is to barely mix it. There should be lumps left. If you mix it too well, it will be tough as you are activating the gluten and that means tough quick bread. I also bake it in a cast iron skillet that is in the oven all during the preheating. Near the end I add some bacon grease or some oil, 2-4 tablespoons of it to get real hot. When I add the batter, it sizzles and starts to bake already. It makes for a fabulous crust.
