Because if you sound out the word barbecue, the b is prominent in the 1st 2 syllables, and the last syllable is cue, which is how you pronounce the letter "Q" So B+B+Q = BBQ

B=Bar, B=Be, and Cue= pronounced as the letter "Q", all encompassing= BBQ..........thats how I justify it :O)

Because both B's are an abbreviations for part of the word barbcue....with the two B's being in the word. Then in the last part of the word, "cue" sounds like Q.
