I would start by installing OpenSSH and then removing all unnecessary software such as Gnome, any GUI-based applications, sound, etc. All of this can be done using standard apt commands, for example apt remove packagename Once you have the optimised system, use apt again to install the server packages you require. You may also wish to use the latest release, Linux Mint 7.

I would recommend using Ubuntu Server Edition instead of Mint for a few reasons. It does not include unnecessary packages by default. You choose which servers to install and configure as part of the installation process. Also, Ubuntu has this: https://help.ubuntu.com/8.10/serverguide/C/index.html
