I believe it has to do with bacteria fermenting with the sugars in the cabbage. I'm not a fan of sauerkraut but my fiance is and he has jars of it fermenting at all given moments.

Contrary to the beliefs of many, true Sauerkraut made the traditional way is not preserved in vinegar, it's the lactic acid created in the fermentation process that gives kraut it's flavor.

Because of the reaction between the salt you pickle it in and the natural suagrs in the cabbage. It ferments and makes it's own "bite' or 'tang'. It takes like there is vinegar in there but there isn't. If you add vinegar to cabbage you get coleslaw, not sauerkraut :-) It's fun to make, if you can stand the smell LOL!!!
