I tried to do that once and to be honest it was more trouble than it was worth. Unless you have a really really good non stick pan it is easier to just buy them at the supermarket.

Are you talking about vietnamese fresh spring rolls with the rice paper on the outside with lettuce and shrimp? If so, you buy rice paper at an asian supermarket, and then submerge them in warm water. Wrap with fresh veggies, shrimp, beef, bean sprouts and cilantro. Sauce for them is Hoisen sauce with crushed peanuts

I would get in my car go to the market and purchase them. They are very time consuming and alot of practice. the products in the freezer section or the dried rice papers are a superior product and you can enjoy making the filling and sauces.

Both the wrappers for spring rolls made from wheat or the rice wrappers for summer rolls are really too much trouble to make at home. No restaurant makes their own since they are inexpensive to buy and can be frozen easily. But the dough for dumplings and potstickers is well worth making yourself and very easy to do.
