I want to be able to can this without using vinegar. My salsa recipe is 2-3 roma tom. 20-25 hot peppers, 2-3 cl garlic and med onion.

I have some coarse ground black pepper and its nearly up to its expiry date.would it be ok to use it after its use by date.

thanks - i think white pepper is nicer with meals that have gravy, but use black pepper for steak and stir-frys etc :)

I go for the cracked red pepper a lot when cooking Asian or Mexican dishes, even many Italian dishes. I love a real kick from red pepper :-)
