Black. White is a bit too fancy dancy. Just as there are "designer salts"...I prefer the plain old iodized salt found in the blue/white box in a normal grocery store. Sea salt, herbal salt, society salt, rich people salt..it's all salt! :)

Usually it's freshly ground black pepper. On occasion, if it really matters to the dish, I will use white pepper, like in a white sauce and I don't want specks in it.
