He doesn't have to show you the radar. You seeing the radar doesn't change the facts of your guilt. He doesn't even have to use the radar to write you a ticket for speeding. The fact is he observed you commiting an offense and cited you for it. You prove him wrong and the charge goes away. The time is a simple mistake either on his part or yours and is not a defense to prosecution. Your options are prove that you were not guilty of the offense you were charged with reguardless of the time or pay the fine. Keep in mind the officer more than likely has a camera that recorded everything (here we have cameras that are connected to the radar unit so target, lock and patrol are all shown on the video along with time, date and a nice pretty shot of you). Even if he doesn't use the radar he'll have a video of you and he can articulate why he reasonably believed you were guilty (for example if he pace clocks you and has a video of him following you which shows his speed on the video).

If you are in the United States, the Supreme Court has ruled that the police do not have to show the driver the lasar radar results or your speed. Maybe his watch battery was dying. This can be corrected in court. The citation is still valid.
