  • There's always good old mashed potatoes! Or you could try making a potato bake, if you have some onions, milk, and cheese lying around the place. Roasties are always delicious, as long as you remember to par-boil them first, scrape the outsides with a fork and heat the cooking oil in the oven first. You could also boil some potatoes and let them cool to make a potato salad! Yum.

How about a quick and easy potato salad? 6 medium red potatoes 2 tablespoons sweet Vidallia onion, chopped 2 hard cooked eggs, chopped 1/4 cup finely chopped celery 1 1/4 cups mayonaise, approximate salt and pepper to taste chopped fresh parsley for color, to taste sliced hard boiled eggs and tomato for decoration, optional Boil potatoes and cool until easy to handle. Cube potatoes in bowl. Add chopped onion, parsley and celery. Add chopped eggs. Mix gently. Add mayonaise and mix gently. Mayonaise should just moisten salad, add more if needed. Season with salt and pepper to taste. Refrigerate for several hours or overnight. Decorate with sliced tomatoes and hard cooked eggs just before serving, if desired. Serves 6 to 8. It is quick to cook and then set aside for later. Alternatively, you can bake potatoes in a microwave and add sour cream afterwards.   • Baked Stuffed Potatoes Bake your potato (oven..400 degrees 1 hour, or nuke it on high for about 10 min..depending on how many an how large) Stuff with what you love... Taco potatoes...Ground beef browned with onion, ortaga chilies (diced up) a bit of Cumin for smoky flavor if you like, adding to the potato, the meat, cheese, tomato diced OR some good hot, chunky salsa...and sour cream! Chicken Potatoes Saute boneless chicken in a little butter/olive oil, with some garlic (do not over cook the garlic or it becomes bitter), add some mushrooms near the end and as they brown, THEN add the garlic..then a nice splash of wine..one you would drink is best to cook with! You can also add some shallots, or sweet onion as well WITH the chicken at the beginning. You can make a cream sauce or not. Add to baked or boiled tatie....yummm. Cheesy baked Potatoes Layer thinly sliced potatoes with thinly sliced onion, and some GOOD cheese...something with zing to it...a gorgonzola, or one with garlic and herbs, or good sharp cheese that you love...mix some milk or part milk/cream with a bit of flour till it's well mixed and not lumpy...you can use corn starch, but the flour gives a bit more flavor. Add fresh cracked pepper and a bit of Kosher salt...Layer the WHOLE THING in a baking dish deep enough for at least three layers ending with some cheese on top, of course!...bake at 375 to 400 about 45 minutes (depending on if your oven runs hotter or cooler..check for tender doneness)
  • Potatoes Romanof Boil potatoes till they are almost done. Cool and coarsely grate them. Add green onions and grated cheese. Add a good dollop or two of sour cream. Mix this with salt and pepper and put it in a casserole and top with more grated cheese and sprinkle with paprika. Bake till potatoes are finished off and everything is hot.
  • I like sauted potatoes. Get your fry pan, put oil and butter in it (equal amounts), put some thinly sliced peeled potato in when the oil is hot, and fry (turning) until golden. Should not take more than 25 minutes. For flavour add diced onion and bacon.
  • I like to roast mine. I cut them up into equal, bite-sized chunks (don't peel them). Spread them out on a baking sheet, drizzle with a little olive oil, add salt and pepper, and and herbs you like. Thyme and Rosemary are always good.   • I like to stuff pasta shells with potatoes and cheeses. Then I boil them for about 5 minutes. Next I saute' them for a few minutes in butter until the shells are a light brown. This is really easy. And they taste GREAT!
  • I also like to roast potatoes (with the skin on, in bite sized chunks) Put them in a large aluminum foil pouch with some sliced carrots, onions, yellow squash, zucchini, garlic (really whatever seasonal veggies you have on hand will work, but don't forget the garlic!) and herbs (whatever you like; rosemary, thyme, cilantro are three that I enjoy. If you use cilantro, try tossing the veggies with a bit of citrus). You can use olive oil or butter, whichever you like, enough to kind of coat everything. Salt and pepper to taste. Now fold up the pouch and cook them in the oven at 425 for about 45 minutes (flip them over once during cooking) or throw the pouch on the grill until the veggies are tender. This is my favorite way to do potatoes because you can really throw anything in with them and they turn out delicious every time. Just play around with different veggies and different flavors.
