Humans have been creating "instruments" since the beginning of time...I suspect there is something innate in us as humans that resonnates with sound in a way that gives us joy....music is food for the mind, body, and soul.

When man began hunting for food, after butchering and eating, the remaining bones and gut were given to the children for toys. Thus began the childhood legacies of musical genius. Eventually the gut was stretched and twanged, and presto, a few thousand years later we have the string orchestra. The bones were beaten on rocks and wood, now we have the percussion section. The wind blowing through dying bamboo gave us wind instruments. The basis for why, however, seems to center on feeling good as well as experimentation.
