Any major publishing house, you can assume, will not do something so bold and awful as to steal your work. If you're talking about vanity publishing or those weird publications that take poems from everyone and then send all those people copies of the printing - they're not going to steal your stuff to use it for something else or leave it uncredited, believe me.
