  • "Country Fried Potatoes" 2 tbsp. butter 2 tbsp. shortening Enough cooked, peeled potatoes to cover bottom of heavy fry pan Salt & pepper to taste Onions, finely chopped (optional) Depending on size, 4 to 6 potatoes should be enough or use what you have left from another meat. Melt butter and butter in large pan over low heat. Slice potatoes into shortening and add salt and pepper, also onions, is you are using them. Cook over medium low heat until a bottom crust forms and browns, turn once, serve hot. Excellent with fried eggs or with any breakfast eggs.
  • I am a big fan of potato skins. So I bake the potatoes till they're totally soft but the skins are really crispy. Then I scoop out the potato, leaving just a little bit..put on some butter, salt and pepper and put them under the broiler till the insides get crispy. I use them instead of bread sometimes..I'll put my filling inside the skins and crunch away..or I'll shred some cheese, chop up some green onions, crisp up some bacon and put all of that on the skins and bake till all the cheese is melted..or I'll put in some veggies like cooked broccoli or spinach or cauliflower and melt cheese over that. I think I'm gonna bake some potatoes today! Happy Saturday! :)
