  • Because water doesn't "cut" the spice and oils in the spices that make them seem hot, hence they don't relieve the "heat". Milk works better.
  • The stuff that is actually hot, the alcaloid Capsaicin is not water-soluble, but oil- or fat-soluble. The Indians have a yoghurt drink called Lassi, which is EXCELLENT if you ordered the flesh-eating variety of curry or chillie, try it, it comes in many sweet and salty varieties (mango lassi my absolute favourite).
  • My Chilean friend explained that the capsaicin in spicy food is actually consuming the lining of your mouth and water won't wash it away. He recommended a spoon full of sugar kept in your mouth for a while. The capsaicin will expend it's energy on the sugar and you can go back to the chips and salsa in less than a minute.
