The contents are put up for auction or is given to charity

Once a bag is unclaimed at the airport for seven days, it is forwarded to the central office where the bag is opened, the contents cataloged and agents try to match the bag to open missing luggage reports. (This is why it is a good idea to always put your name & contact info on the INSIDE of your bags as well in case the tags get ripped off.) If a match cannot be made in 90 days, the unclaimed bag becomes the property of the airline and they dispose of it as they wish. Quite often they are auctioned off to places that try to resell the contents. The most notable an example of such a place is the Unclaimed Baggage Center store in Scottsboro, Alabama http://www.unclaimedbaggage.com/index.html
