    Absolutely everybody, who can access the server or your connection: cops, goverment, local lamers. Want secure chatting? Use Skype! Many criminals use Skype now to chat, because the encryption is (custom/non-standard/)unbreakable and even Skype company doesn't want to reveal it anybody (Or else they would lose customers and large sums of money. Would you like to be bankrupt? No!).
