Fry in peanut oil. The hotter the temperature of frying oil the better. Try Panko crumbs or your mix with them added in. Once you coat the parts with the crumbs, set the breaded chicken aside for 15 min to "dry" for extra crunch.

Restaurants boil them in oil in a pressure cooker. That gets the oil a lot hotter. I don't know if you could safely do that in a home pressure cooker. Its also REALLY bad for you.

I make Shake n Bake chicken often and I soak the chicken pieces in buttermilk, coffee cream or cereal cream for a few minutes. It seems to seal in the juices and the coating sticks quite nicely.
