I have done that many times. I treat it the same way as I treat regular ground meat. It is healthier, especially if mixed with sausages spices but not with the added beef fat some people put to take out the gamey taste.

Usually wild game has less fat in it than a farmed cow, so go for it if you like the taste and have access to the deer :) I don't really have access to deer to try it, but I would if I were offered some.

It's leaner so it is a bit healthier in that respect, but it's still meat. To much meat (or anything) isn't good for you.

I've had venison tacos, meatloaf, pot roast, burgers, spaghetti sauce (wasn't so great - I normally use ground turkey, so the taste of the red meat in there was kind of offputting), chili (again, I usually use ground turkey for this, so it was a bit strange - I think if I adjust some of the spicing it may not be so weird next time though). I'd have to say the best was the pot roast! It was so much juicier and more tender than I've ever had with a beef roast, and it didn't take as long to cook (with beef roasts it seems like you have to cook them forever to get them tender.. the venison wasn't like that). It's definitely healthier, since it's leaner meat (less fat) and you pretty much know it's free of growth hormones and steroids (which you can't say for beef these days, you just never know!).
