Probably my favorite artist who has jumped all over from pop, to metal, to rap, to noise, to everything in between is Mike Patton. Patton started out in the band Mr. Bungle who were notorius for blending genres, then he also became the singer for Faith No More (another genre bending band). He then worked with various musicians, dj's, artists over the years doing many types and styles of music and also was part of the bands (as either a member of the band or an album guest) Sepultera, Fantomas, The Dillinger Escape Plan, Tomahawk, Lovage, and more. He has also released two experimental solo albums, put out a pop album under the name Peeping Tom with various musicians on board, just recently scored a movie and has done voice over work for games like The Darkness and Bionic Commando as well as doing the voices of the vamoires int he film I Am Legend. Mike is all over the place, he has his own label (Ipecac Recordings) and shows up on many records doing all kinds of stuff...his range and versatility or limitless. It's hard to find a lot of his best stuff on Youtube but here's a few examples of just a small bit of his work.

Darius Rucker from Hootie and the Blowfish fame has gone country and seems to be doing quite well.

how about the beetles?? they had like pop songs and then they were like acid rock and they are the most famous ever!

The Pointer Sisters. Their early killer-jazz stuff! Wow! when there were four in the group. And then they wrote "Fairytale" song and won a Grammy for Best COUNTRY Single by a Group. Then in the 80's their huge pop hits -- I'm So Excited, Jump, Neutron Dance, etc. Huge fan. These women know their stuff and harmonize better than any group since The Mamas and The Papas. ( OK, I know I talk too much.)

Rod Stewart was a Rock and Pop icon in the 70's but was very successful in recent years doing adult contemporary and old standards.
