Because they have no patience.

In the hope that this time, just this one time, because I'm in a hurry, the electronic circuitry will somehow understand my urgency and do everything faster! LOL

People often do it to convince themselves it will make the elevator come faster. Others do it to pass the time while they wait for the elevator, it sometimes lower the sense of urgency.
-
This gives a person a sense of control in a situation where they have none. Pushing the button won't make the elevator come any faster, and some people get uncomfortable with not being in control of that situation. Pushing the button is an outlet for their frustration and anxiety in the situation.

Because in some systems, the circuit responds to 'stimulli' like a biological one. Even though other 'commands' come in at different parts of the network, the thought is that increased commands for a specific prompt (i.e., floor) will garner overiding priority. In older systems this was partly true. In most of today's systems, that is no longer the case. So mostly it makes us feel good.

It makes the elevator close the doors quicker

I do that when I get impatient :P

they are slow learners

People seem to think that if they push it more times it will either give the elevator a sense of emergency, or maybe give it priority... i think. "Maybe if they push it 10 times it will think 10 people need to get on and it will hurry..." I honestly have no idea- it drives me nuts! Especially if there's a pause between pushes, as if the elevator forgot or something. People...

I might do it because I can't be sure it worked the first time. After all, mechanical things aren't foolproof. Besides, it can't hurt, can it?
-
So the elevator will know it's important and not stop for a coffee break on the way up. :)

OCD?

For the same reason some keep flipping the light switch when the bulb is obviously dead. The obvious is never acceptable.

I think it's to do with anxiety, trying to exert control over an anonymous machine.Particularly when your body is telling you, that this is a unnatural environment. In any situation where we feel we are not in control,we attempt to rectify that, even in irrational ways by pushing buttons repeatedly. I 'm sure it's a stress marker
