Now there's a great drive. I did it from Los Angeles up to San Francisco. I toured LA first then stopped in Santa Monica, Malibu, Santa Barbara, Solvang (not right on the coast but worth a short side trip), Hearst Castle, Big Sur, Carmel, Pebble Beach (and the 17 mile drive- gorgeous!), Monterey and up to San Francisco. There are numerous other beaches and beach towns along the way where you can also stop. I then doubled back inland (because I had to make time) and drove back south to San Diego before flying home.
