So that they would have a CHOICE! If He did not leave anything at all that even had power to tempt tham, He is not really allowing them choice over their state of affairs. By having at least one thing they could not do, He is allowing them to choose infdefinite life with God in the garden, OR to choose 'the death option'!

It's all about free will. The tree of life didn't make them sin. They made themselves sin. God wanted man to have free will and to make a choice. He didn't want us to be automatons. Would you want to be one? You have free will. They had the decision from right or wrong. They chose to do the wrong thing. Doing the wrong thing has consequences. Be thankful you know how to make a right choice and reap the benefits and enjoy. Something you wouldn't even no about not having free will.
