To keep in line with modern business practice. In real life business (not just e's to friends and family) it is important to know who the primary recipient of the correspondence is. For instance, if you are sending a letter to a boss and her flunkies, she is primarily responsible and her name goes on the top line. But to help insure that the work gets started right away, it goes to the flunkies as well.

First, cc (lower case), in not carbon copy, it is copieS. p=page, pp=pages; c=copy, cc=copies: this dates back before the invention of carbon paper. Secondly, the recipient can see that they were just copied, so that they know that (for example) any orders in it are not addressed to them.
