What is it called when your cell phone's company piggybacks on another cell phone company's signal to connect you (because it's out of your company's range)? (You get charged for it, I think)

    This is called "roaming". It happens when you leave your provider's coverage area and enter the coverage area of another provider. That other provider carries your signal, and charges a fee to your provider. Your provider, in turn, passes on some or all of the cost to you.
