Look for a 'Make Before Break' switch - you will be able to accomplish uninterrupted switching. This is very common approach, but the switches one normally finds are Break then Make, so you need to source carefully. There will be a very short time when both batteries are connected, however the resistance of the feed wires will manage any momentarily surge. You do need to make sure the switch is sized to the batteries, e.g. do not use a very small switch for larger batteries. If you are using 'auto' batteries, then a Marina battery A-B switch will work for you.
