Is there a difference in the meat from a tom and hen turkey?

Tom turkeys are bigger than hen turkeys. That's because toms have larger bone structure. That means that toms under 21 lbs will be mostly bone. You also will get more dark meat than white. If you are feeding lots of people who love like dark meat that's a good choice for you. If you want a tender and juicy bird a hen is a better choice. Hens will give you more meat at lower weights, a 16-pound hen will easily feed 12 people. So if you want the best bird for an average group of people who love both white and dark meat, a fresh hen is the best choice:-)

I have found the hen turkey to be more tender, in general..I would rather cook two 15-lb hen turkeys than one 25-30 lb turkey..and have! :)
