  • Actual chefs do very little if any cooking. Most of it is sous chefs and line cooks. Chefs are more the kitchen manager types. They make the menus, and sign the checks.

  • Originally when they started to wear a 'uniform' for cooking, they wore gray as opposed to the priests and monks they stayed with who were wearing black. Then in the middle 1800's chef Marie-Antoine Carême redesigned the uniforms. He thought that white was more appropriate, that it denoted cleanliness in the kitchen. It was also at this time that he and his staff began to wear double-breasted jackets.
