It can go rancid. If it does, you will neither want to smell it or eat it...yuck!

I've eaten post dated peanut butter, but it hadn't been opened yet. It was fine. If it's been open for a while, I'd err on the side of caution and trash it. You don't want to get sick.

The expiration date is the last date it should be sold, not the last date it should be consumed. When peanut butter goes bad, it will become rancid, and will have a smell something like old gym socks. If it tastes ok, it IS ok.

I have a jiffy jar in my garage that I use every so often to put on mouse traps, it's at least 6 years old and even being opened and in the heat/cold/freezing outside every year it still tastes great and the mice still love it, check the picture!

You can usually tell when it starts to go bad. The oils separate a lot from the rest. The paste starts to dry. Later it smells pretty bad. Eventually, things start growing in it that are not peanuts.
