A simple phishing scam could get you the password to the account (email the owner asking them to log into your website, which should be a replica of the log in page for their account associated with the webpage, where you then snatch the password from it), and then you have access to all of the files. You're going to need to know basic html to understand what to change and what not to. Also, if you're trying a big website like google or youtube, think again. Remember, doing something stupid could get your ass sued, so research into what you're doing before you attempt it.
