By 'fresh' I take you to mean 'mold free'. The temperature of the refrigerator will slow the grown of molds.

To 'understanding time' I think you need to have the context that analog provides...the sweep of the second hand, the vast space before and after the minute and hour hands...thats what gives me an 'understanding of time'.
