I looked this up on the internet awhile back when I ran out of brown sugar. The best substitute I found is: For every cup of brown sugar, add one cup of white sugar and a tablespoon of molasses. I used this in my cookies, and it tasted no different than it normally does. Supposedly brown sugar is even made with these ingredients.

    • I just made Oatmeal and date cookies using the molasses. And you know what. I think they tasted BETTER that way than with the brown sugar. I may never use brown sugar for baking again if everything improves in taste.

    • Yeah, I like the taste too. It gives a stronger "brown sugar flavor" than brown sugar does.
