The official language of the Holy See is Latin, but I don't think Vatican City has an official language, though it does use a lot of Italian. The bishops are for the most part not conversationally fluent in Latin, so they wouldn't conduct daily business in it.

It has no set language in law. It uses Italian in legal and official documents (the Holy See uses Latin) but other languages are used such as German for the Swiss Guard. At least I think that is the case. I can't be bothered googling it sorry :)
