• It must have needed more time?
  • Did you take it out of the fridge and put it in the oven? What temperature, did you have the oven on? How long did you leave it in the oven?
  • The oven doesn't need to be hot, but the meatloaf does need to be in there a long time, usually an hour is good.
  • I'd guess it just didn't cook long enough. For a pound of meat it takes 50-60 minutes. Having it in the fridge overnight shouldn't matter - I do that all the time to save time the next day and have always had them cook fine.
