"Just right" or medium well :P

My personal preference is to season with a little salt black pepper, and maybe a tince of cumin and chili powder(fairly mild) then cook briefly on both sides (just seared) then plated with a good fluffy potato and something green and tasty (beans or salad). Simple is good in my book!

Rare, with a slathering of mushrooms and some A1 steak sauce.

Wrap it in bacon, and grill it over wood, carefully until it is just barely medium, not medium rare, but medium. Nice pink inside but definitely warm and cooked.

A rib eye is a cut of meat that benefits from intense marbled fat, which loads the meat with flavor. Medium rare is the minimum and just done is the maximum. This range will ensure the fat has had an opportunity to melt and share flavor. I know you didn't ask, but a loin cut, conversely is a little more lean. These should be cooked as "rare as you dare"... I like mine so rare, that if you changed your mind, you could spray it with Absorbine JR, slap a bandaid on it, and heal it back up to health.

I don't prefer the cut. When I do make it it's served medium rare.

Most cuts I prefer medium rare, but rib eye is better served medium due to the higher fat content.
