  • I make grilled cheese all the time.. but a bit differently. One slice of bread, cover with cheese and a slice of tomato or onion (optional) toast in toaster oven.. until the cheese sizzles. The direct heat on the cheese intensifies the flavor somehow. IF you have no toaster oven, use the broiler... toast one side of the bread, flip, cover with cheese and toast other side. and the best way to avoid burning the cheese or bread? - take them out before they start to burn. The crust is somewhat prone to burning. If it happens, just leave them on the side of your plate.

  • Practice! I make grilled cheese in an iron skillet all the time. The key is to heat the skillet just enough to brown the sandwich without burning before the cheese melts. You can turn the heat up higher, and pay closer attention to the bread as you do, but you repidly reach the point where the heat is just too high. Take note where the heat is set and try again at a lower setting. But remember...there is a lag time between the time you adjust the heat and when the skillet reaches the new temperature!

  • Three methods. (1) Pop your cheese sandwich into an electric, grilled sandwich maker for a minute or so. It's idiot proof, so long as you don't walk away and forget it. (2) Lightly butter the outsides of your cheese sandwich and put it into a slightly preheated frypan (I like non-stick) at a medium low heat and cover. Check often and flip before burning. It will take a few minutes. (3) This one is the most work, but it's to die for. Chop up some onion and mushrooms. Make toast. Now spread salsa, onion,and mushrooms on the toast and top with your favorite cheese. Place on a flat cookie sheet and slide it into a preheated oven and broil until the cheese bubbles, it only takes a minute or so, don't take your eyes off of it. Serve open faced and cut into 4. Tip: try to cover as much of the toast as you can so it won't burn.
