Are you in need of the space? I use succession planting, meaning when one crop season is over I pull up the plants, chop them up and toss them in the compost bin and then plant my next crop. Some people just let the ground rest with the dying/dead stalks of plant standing or falling down then in the spring or the next season they plow or till the soil and the plant under - letting the plant become food for the next crop.

Best choice is to rake out and pick up the dead plants. If you leave them in the garden you could possibly end up with a disease or blight of some sort in the next seasons to come.
