This seems to be a bit of manipulation and control on your part. I would suggest you accept him as he is, compliment him and show appreciation for that which you like, but keep your "pointers" to yourself.

I think you could make a love letter out of that list. Sort of: I love you so much for who you are and for all the things you do for me like (introduce here those things). (but, of course, don't LIST them, just express them as you think about them)

try making a header saying "I love it when he..." or something like that, and then leave it laying around the house somewhere.

something a friend of mine did was, she took a deck of cards, and wrote 52 things she loved about her boyfriend... why don't you make it into a game of some sort? you could write both the things you love and the things that you'd like to try...and maybe even mix in a few things he might like?

Re-read your question, specifically the following: "partly to give him some pointers" That seems to indicate (to me anyway) that you're trying to change him.
