If you OWN the business, and have a Director of Operations to have the heart attack for you, that is true. Every restaurant I've ever worked for where the owner was also the manager, those guys were headed for an early grave. Definitely not the case. It's better to be a high-paid hourly employee, and go home each night with the attitude that if the place burns down tonight when I'm not there, I'll get another job just like it tomorrow afternoon.
