Salt is what is used to 'cure' the meat. It is the preservative. Not all bacon is as salty as other. The better quality bacon usually isn't as salty because they use fresher meat - never frozen, and they actually smoke the meat with low temperature smoke instead of the cheap bacon that has smoke flavoring added to it with the brine.
