I keep a bottle of water next to my bed, and sip from it occasionally during the night.

Keep your mouth closed at night....

Skip the Listerine when you're brushing your teeth at night, or switch to an alcohol-free mouthwash (I think Crest Pro-Health is alcohol-free). The alcohol is dehydrating, which can contribute to the old-sock feeling.
