There are several: Borscht (beet) with a little sour cram and some fresh-grated (OR you can use the already-processed) horseradish. If you decide to grate your own horseradish, BEWARE: grating fresh horseradish is VERY strong on the eyes and throat. Vichyssoise (Leek and potato) Cold fruit soup (Any individual fruit or assorted fruit) Cucumber (with some onion) Gazpacho (an assortment of tomatoes, onions, cucumbers, squash and other veggies, cooked and cooled.
