My opinion is that people do not care. They don't care because caring about this is not something that will get them laid, so they just don't have the time.

More woo-woo nuttery. The Codex is a recommended and completely voluntary standard for nutrition that gets trotted out every few years when people have forgotten that their December 200X prediction didn't come true.
