Use a cup of ice cold water to test the dough with. It must have enough lard in it to cause it to "Float" in the water. We mix Karo Syrup in our Fruit Tamales to make the dough a bit sweeter & red sauce with chilies to make the Beef Tamales a bit warmer. We fill Our "Fruit Tamales" with canned "Pie Fillings", cherry, apple, minced meat, blueberry etc. We use a "Pressure Cooker to "Steam" cook them in. Tradition uses a large pot, ceramic cup & large plate, & a penny. The cup goes in first, then water to almost cover it then the penny on bottom of pan & plate on cup. The penny is an "Alarm" by "Rattling" until the water is gone (several hours B4 Tamales are done). In the "Pressure Cooker" it takes about 15 minutes is all after the pressure is "Up". John & Tam

I love making tamales:-) Usually I use the back of a large spoon to spread the masa on the husk. Dip into the bowl of masa with your spoon and take out approximately one heaping tablespoon of masa. Spread it on the husk in such a way that it covers the lower two-thirds of the right four inches of the husk. The masa should be thick enough so that you cannot see through to the shuck but not too thick. Hopefully your masa is light and fluffy. I've uploaded a video that sort of shows how to do it. It's the second video at about 1 minute 20 seconds. But I first want you to see a terrific video of something I'm planning ot buy very soon, called a masa spreader. You don't have to watch the whole thing but you will be amazed at how fat she can do 60 tamales. She will do that whole table worth of masa in just a few minutes LOL!!! I love this video!!!!

buy homemade masa...any mexican bakery will have them...but just like the videos..thats how you would do itl ol
