If I were to milk a non-dairy cow, some breed commonly raised for meat, how would the milk taste compared to that from a breed specifically raised to produce milk, like a Jersey?

    Most likely it wouldn't have as much butterfat. Dairy breeds are bred for volume and richness (butterfat). Milk is purchased for processing and resale based on volume and how rich it is in butterfat.

    The higher butterfat content would make the milk from a Jersey, Gurnsey, etc. taste richer.

    pretty much the same... however you MIGHT get less of it. BUT considering you have likely never tasted non-pastuerized milk so it would likely taste richer just because it was fresh

    jerseys are usually reared to produce cheese and other things that reguire butter fat, the standard milking cow is a holstien frisian. the milk from any other breed would contain a lot of butter fat, in order to better serve the calf with nutrients, it would probably taste more like cream
