  • Candied Butternut Squash with Cinnamon and Honey 1 large butternut squash, quartered lengthwise 1/4 cup melted butter 1/4 cup honey 1/2 cup finely chopped pecans 1/4 teaspoon cinnamon Scoop seeds out of butternut squash. Arrange butternut squash pieces, cut-side down, in a large baking dish. Pour hot water in the baking dish to a depth of about 1/4-inch. Bake butternut squash at 350° for 50 to 60 minutes, or until tender. Cool squash; peel. Cut squash into 1/2-inch slices and place in a 9x13x2-inch baking dish. Pour butter and honey over squash, then sprinkle with pecans and cinnamon. Return to oven and bake for 15 to 25 minutes, until butternut squash is glazed and hot.
  • This is my favorite way to prepare any kind of squash..wash, peel and slice squash..braise onions, celery and bell peppers in butter till soft...add chopped tomatoes and squash..braise all together till squash is tender, but not mushy. Season with salt and pepper and serve as a side dish or as a main dish over noodles or rice. A nice salad and some good sourdough bread and you've got a really nutritious meal there. Sometimes I'll sprinkle some grated cheese on top after I've dished it out! :)

  • ...I slice the butternut squash in half...scoop out seeds...put several slice marks into the squash...bake in a 350 oven until tender (about 30 -45 minutes depending on size)...and baste periodically with a garlic, butter, & parsley mixture...add salt & pepper at the end and enjoy!

  • This recipe makes a great pie 1 (10 inch) unbaked pie shell 2 c. mashed, cooked, butternut squash 1 can evaporated milk 2 eggs, beaten 1/2 c. brown sugar 1/2 c. white sugar 1/2 tsp. ginger 1/2 tsp. cinnamon 1 tsp. vanilla 1/2 tsp. salt Mix all the ingredients together and pour into the pie shell. Bake at 350 degrees for about 60 minutes or until firm in the middle.
