If I'm an Expert in some category can I somehow remove my title as an Expert?

You cannot remove any Expert Titles in "Expert In". There are two other possible ways. The first way is to stop answering questions in that category, and let someone else take over. This will take time, but sooner or later, someones bound to take over. Another way is to flag questions under that category in a new category. The questions that are flag that you answered will be moved to a new category if accepted. If it is, then the points you earned from that question will be deducted from your expert points, causing you to lose the expert title. You will not lose any total points, just only the expert points.
