I don't really know, but in the city where I live, most of the "Japanese" restaurants are owned and operated by Chinese. Only two are Japanese-owned, and they are quite good. I don't think it really matters much whether a Japanese restaurant is Chinese, Korean, or Japanese-owned, as long as the food and service are good overall.

I don't think who owns the restaurant would make much of a difference. As long as the sushi chef is properly trained in knife techniques, the fish would taste much better. Although most of the Japanese operated sushi restaurants I went to give me much smaller portions for the similar price.

I truly don't know how many are owned by Japanese in the US. Here in Peru - South America all are owned by Japanese chefs. Chinese people don't prepare the Japanese food as good as the Japanese do. Regarding Koreans I would not eat their food, I have seen how they use dog meat in their native food thus I don't trust them. Regards.
