Well, if they exist, it could be for the same reason we didn't find any Giant Squids and thought they were extinct (for the longest time): http://news.nationalgeographic.com/news/2005/09/photogalleries/giant_squid/ Or, it could be that they simply don't exist.

The mountain animals & insects would eat the various parts of the beast... Carnivors: would eat the muscle meat, skin, possibly fur smaller carnivores would eat into bones & suck out the morrow, other types like porcupines & such would eat the nails & so on... Not tomention decay & fungus would break down the body as well....

This is a very interesting point. If they are intelligent beings, perhaps they gather the body and bury it or dispose of it in some way. I think the yeti or abominable snowman is a form of bigfoot. This type of being seems to have been sighted in many different places. To me this gives it some sort of validity.
