Technically, potatoes are actually tubers rather than roots. They are the swollen parts of the stem to which the roots are attached. Nutritionally speaking, potatoes are really very good. According to my dad who is a botanist and former Idaho farm boy, they are the closest thing to a perfect food there is. A person can live longer on just potatoes than he can on any other single food. It was the introduction of potatoes to Europe that helped to stem the cycle of famines that afflicted that region during the Mini-Ice Age. Yes, they're vegetables. I think the confusion, if any, may come from the French term for potatoes. Pomme de terre literally translates into English as "apple of the earth".

Yes, they are indeed vegetables, tubers exactly. a good way to tell, in the future, is look for seeds. Seeds imply fruit, and a lack thereof vegetables. Sugar content is higher in fruit as well, and while potatoes are while tasty, they are not as sweat as, say, a strawberry.

It's a tuber, a repository of starch and nutritionally in a different food group than true root vegetables like beats, turnips, rutabagas, and radishes. In other words, if you wanted a balanced meal and had potatoes, you'd still want to add another vegetable. In fact if I was chiefly interested in nutrition, and had a lot of potatoes to peel, first I'd pick the blight spots out of the peels, then peel them, serve the potatoes to everyone else and boil the skins for myself. Most of the vitamins and minerals are in or directly under the skin.

Potatoes are a tuber that is considered to be a vegetable. Vegetable isn't some kind of scientific term, like fruit can be. There are quite a few things which could be described differently that are commonly called vegetable, like mushrooms. They are fungus, scientifically but they are veggies to us. A tomato is scientifically a fruit but by law it is called a veggie. Even seaweeds are considered veggies.
